White Cheese Chicken Lasagna

Homemade from scratch noodles with homemade spinach cheese sauce. Delicious, filling, warm meal that you will want to make all the time!

Ingredients

  • Noodles
  • 1 1/4 cup of flour

  • 2 eggs

  • Pinch of salt

  • 1 teaspoon of olive oil

  • Sauce
  • 1/4 cup of butter

  • 2 garlic cloves

  • 1 teaspoon of Italian seasoning

  • 1 cup of ricotta cheese

  • 1/2 cup of mozzarella cheese

  • 1/2 cup of parmesan cheese

  • 1 1/2 cups of chicken

  • 1/2 cup of spinach

  • Lasagna
  • 2 cups of mozzarella cheese

  • 1/4 cup of parmesan cheese

  • Top with salt, pepper, garlic, and basil

Directions

  • Combine all the ingredients for the noodles and knead for 5-10 minutes. Let it set while cooking the chicken. Season with salt, pepper, garlic, and basil. Shred the chicken.
  • Roll out your dough for the noodles and cut into rectangles about 2″ x 7″. Bring a pot of water to a boil and cook the noodles for about 2 minutes.
  • Add 1/4 cup of butter to a small pan until melted add garlic, ricotta cheese, parmesan cheese, and mozzarella cheese. Once combined add the chicken and spinach.
  • Oil a casserole dish and pour in 3/4 cup of the sauce, layer on 3 of the noodles, and top with mozzarella, parmesan, and seasonings. (salt, pepper, garlic, basil) Repeat 2 more layers.
  • Put aluminum foil over the top of lasagna and bake for 45 minutes, remove the foil and bake another 15 minutes. Pull out the lasagna and let it set 15 minutes then enjoy!

Notes

  • Assemble ahead of time and set in the fridge so it is ready to pop into the oven.
  • Keep leftover for up to 5 days or freeze.
