Ingredients
1/4 cup of olive oil
1/2 teaspoon of salt, pepper, garlic, cumin, paprika
1 1/2 cups of long grain rice
2 roma tomatoes
2 cups of water
Directions
- Add olive oil to a pot with the seasonings and cook until fragrant, add the rice and cook for one minute. Blend the tomatoes and water together and add into the pot.

- Cover with a lid and simmer for 20 minutes. Once cooked mix everything together and enjoy!

Notes
- Keep the leftovers in the fridge for up to 5 days.
