This recipe is so versatile you can use it in so many dishes; it is delicious. It only takes 25 minutes and 20 minutes is completely hands off. Whip up this recipe and use it for meal prep, dinner recipes, breakfast recipes, it is so tasty.

Ingredients

  • 1/4 cup of olive oil

  • 1/2 teaspoon of salt, pepper, garlic, cumin, paprika

  • 1 1/2 cups of long grain rice

  • 2 roma tomatoes

  • 2 cups of water

Directions

  • Add olive oil to a pot with the seasonings and cook until fragrant, add the rice and cook for one minute. Blend the tomatoes and water together and add into the pot.
  • Cover with a lid and simmer for 20 minutes. Once cooked mix everything together and enjoy!

Notes

  • Keep the leftovers in the fridge for up to 5 days.
